The older I get, the more I realize that packing a yummy & satisfying lunch is vital to my productivity and efficiency at work for the second half of the day. Plus, it gives me something to look forward to. Even when I work from home, I try to pack my lunch the night before so that I don’t end up eating a piece of string cheese & veggie straws in a rush. Packing a lunch also helps me out on those days I end up having something come up last minute. Salads are a great lunch option in the Summer time but sometimes are difficult to pack & can be on the boring side if they don’t have enough toppings/flavor! Enter these Mason Jar Salads that have been all the Pinterest rage the last few years. Today, I am sharing with you how to pack up my favorite salad in a Mason jar. By making several of these ahead of time on a Sunday, I know that both my husband and I can be set up for sucess for the week! You can also use this same “formula” for any other combination of ingredients. Cheers to good lunches!
Layer 2: Vegetables (Roasted Butternut Squash)
Layer 3: Grains (Cooked Farro)
Layer 4: Meat/Cheese (Shaved Parmesan)
Layer 6: Lettuce, Nuts, and Dried Fruit (Arugula, Parmesan, and Dried Cranberries)
Shake it up & empty onto a plate. Voila!
