We love this dip, especially in this season, for football games and parties! Aside from being delicious, Romesco is also a nutritional powerhouse – rich in antioxidants from the roasted red peppers and a great source of healthy fats from the almonds. The Greek yogurt adds a creamy texture, while giving it a boost of protein.
- 12 oz jar of roasted red peppers, drained well
- 2 cups of roasted, salted almonds
- 1 cup chopped parsley
- Juice of 1/2 a lemon
- 2 tablespoons rice wine vinegar
- 1/2 cup Greek yogurt*
- 2 Tablespoons olive oil
- Salt and pepper to taste
- Place all ingredients in blender or food processor and puree until smooth. Serve with vegetables or crackers.
*Feel free to omit Greek yogurt if you are taking this to a tailgate and it will need to be outside for a few hours or if you avoid dairy!
